This beautiful dish can be made with whatever vegetables are in season. Vegetables are sliced thinly and layered to create a colorful presentation.

Ingredients for the tian I made above:
2 zucchini
1 yellow summer squash
1 sweet potato, peeled
1 medium red onion
About 1/2 cup your favorite tomato sauce/pasta sauce/pizza sauce
1 to 1 1/2 tsp extra virgin olive oil (optional)
Salt and pepper to taste
Dried or fresh herbs to taste (I used about 1 tsp dried Herbes de Provence)
Cashew cheese (optional)
Garlic cloves still in their paper skins (optional)
Baking dishes: I needed two baking dishes for the amount of veggies - one 8"x 8" square pan, and one smaller oval pan.
Oven heat: depends on your oven (see my notes below), but around 350-400F.
Cook time: again, depends on your oven, but around 35-50 minutes
Slice veggies so that they aren't paper thin, but around 1/8" thick.
Spread tomato sauce on bottom of pan(s).
Layer veggies in pan, stacking them against each other, and alternating colors, as shown above. For a square pan, you can layer them in rows as I did. For round or oval pans you could layer them along the edge, working your way inward. Whatever you find most appealing.
Tuck little dollops of cashew cheese along the vegetables in random places. The cheese adds a little flavor, but isn't necessary.
Tuck garlic cloves along the vegetables in random places. They will roast in their skins. Then the delicious garlic can be squeezed out of the skins and used when serving this dish, or for other dishes.
Drizzle 1 tsp olive oil over the veggies if desired. Season with salt and pepper, and sprinkle with herbs.
Bake until veggies are done. Enjoy - it's almost too pretty to eat!
Oven notes: I have two ovens in my stove - the top oven is smaller and cooks more quickly than the larger bottom oven. In the top oven, I did 400F for 25 minutes, then lowered the heat to 350F and cooked another 10 minutes. If you're using a larger oven, you may need to cook longer. Cook until the vegetables are cooked through.
