This easy vegetable soup is a comforting way to warm up on cold winter days.
Ingredients:
1 small onion, diced
2-3 stalks celery, diced
1-2 carrots, peeled and diced
1/2 to 1 cup frozen cut green beans
1/2 to 1 cup frozen kale or spinach
1 small or 1/2 large fennel bulb, core removed, diced
1 tsp Italian seasoning
1 tsp jarred minced garlic in water (or 2 cloves garlic, minced)
4 cups vegetable broth
Salt and pepper to taste
Place all ingredients in a soup pot over medium heat. Saute until the onion, celery and carrots start to soften, adding a splash of water or broth as needed to prevent sticking.
Add broth. Bring to a boil, reduce heat to simmer, cover and let cook for 30 minutes.
Jeannette's Tips:
This is a great way to get a side of non-starchy vegetables in at a meal. Or, you can make this soup a meal in itself by adding cooked beans, cooked pasta, cooked rice, or cooked potatoes to your bowl of soup.
Serve with some warm sourdough bread for a comforting winter meal.
