Gary's Kitchen: Black Bean Popsicles

This is a delicious pudding that you can make into popsicles, made from black beans and naturally sweetened with dates. Try adding some spinach or other fruit or vegetable that would complement the chocolate taste, or wouldn't really be detectable, to add even more nutrition.

Pudding ingredients:

  • 12 small to medium sized dates, pitted (or 6-8 large dates)

  • Almond milk (or your plant milk of choice), enough to cover dates in blender (about 1/2- 1 cup)

  • One 15oz can black beans, rinsed and drained

  • 2 T cocoa powder

  • 1 tsp vanilla extract

  • Optional: 2 cups fresh spinach


Place dates in a blender or food processor and just cover with almond milk. Blend until it becomes a slurry. Add more almond milk if needed.


Add the beans, cocoa powder and vanilla extract (and optional spinach) and blend until smooth. Add a splash of almond milk if the mixture seems too thick for your liking.


You can stop here and eat this as a pudding or delicious dip for fruit, or even as a topping for ice cream.


Or, to make popsicles, spoon the pudding into popsicle molds and freeze. Enjoy!
